The skipjack tuna is a small tuna with dark flesh, recognised by the dark longitudinal stripes on its belly. It travels in schools and feeds on small fish, squid and crustaceans. It is one of the most abundant tunas and highly prized in Polynesia.

In island life

Fresh, in thin slices with lime, coconut milk and vegetables, raw fish is the emblematic dish of the fenua: tuna and skipjack are the fish most often used to make it.
